Heat a saucepan over med-hi with oil and butter. Salt and pepper both sides of the pork chops.
Add pork chops in and cook 5 minutes per side. Once completed, set aside and cover.
Add 1 tbs butter to the pan and add onions in. Caramelize by cooking about 10 - 12 minutes with frequent stirring.
Add garlic and thyme for 30 seconds. Add in chicken broth scraping the base of the pan. Stir in heavy cream for 1 minute. Add pork chops back in and set heat to low. Simmer for 5 minutes or until pork is finished cooking and the sauce is thick. Serve hot and enjoy!
