¼cupbutter or margarine
¼cuporange juice
½cupbrown sugar
½tsppumpkin pie spice
½tspcinnamon
7ozmini marshmallows
Instructions
Preheat oven to 350 degrees F. Bring a large pot of water to boil.
Add the sweet potatoes to the boiling water and cook for about 15 minutes until fork tender. Drain and add the potatoes into a large bowl. Beat the potatoes until mashed. I like to use a hand mixer or you can use a potato masher.
Stir in the butter, orange juice, brown sugar, pumpkin pie spice, and cinnamon.
Grease a 9 x 13 baking dish with nonstick spray and add the sweet potato mixture. Spread it out evenly and sprinkle the marshmallows on the top. Bake for 23 minutes or until the marshmallows are golden on top. Enjoy!
