To a instant pot add the chicken, pour the water over the top then sprinkle with the taco seasoning. Place the instant pot lid on top, set the valve to sealing pressure cook on high for 20 minutes with a 10 minute natural release. Once the chicken is cooked pull it out of the instant pot and shred.
I like to place the lettuce mixture in a bowl and top it with the rest of the toppings of course including the chicken! We like to drizzle a little ranch over the top and salsa.
