Cook the pasta according to the package instructions. Drain and set the pasta aside. In the same pot that we cooked the pasta in, add the butter, oil, and cubed chicken. Season the chicken with half of all of the seasonings and 2 tablespoons of the honey. Cook on medium heat until the chicken is cooked through, about 5 to 7 minutes.
Once the chicken is cooked, remove it from the pan and set aside. In the same pot, add in the onion and cook for about 3 minutes, or until softened. Stir in the minced garlic and cook for about 15 seconds. Add in the remaining seasonings, remaining honey, diced tomatoes, and heavy cream, and bring to a simmer, stirring often, for 2-3 minutes.
Stir in the cheese and add back in the chicken and drained cooked pasta. Combine and serve. Enjoy!
