Add the oil to a skillet, once it's hot add the turkey cook it through. Now add in the ginger and garlic stir for 30 seconds. Now add the onion, hoisin sauce, soy sauce, vinegar, and sugar stir to combine and let simmer for 5 minutes. Stir in the chestnuts and sliced green onions.
