Ingredients

olive oil

celery
sliced

white onion
diced

cooked white rice

low sodium soy sauce
Instructions
To a large skillet over medium heat, heat up the oil. Once it is hot, add the vegetables in and saute until soft.
Push the vegetables over to one side of the skillet.
Crack the 3 eggs in. Season with a dash of salt and pepper and quickly scramble the eggs until cooked.
Add in the cooked white rice and soy sauce. Stir everything together and let cook for 3-5 minutes. Enjoy!
