To a large deep skillet over medium heat add the oil, once hot add all of the vegetables stirring frequently let cook for 5-8 minuets or until vegetables are to your desired softness.
While vegetables are cooking, bring a large pot of water to a boil and add in the noodles and cook according to the box instructions, drain and set to the side.
Add all of the sauce ingredients into a small bowl whisk well.
Once vegetables are tender stir in the minced garlic. Now add in the cooked drained noodles and sauce. Stir well and let simmer for 4-5 minuets. Enjoy!
