Loaded with a rainbow of fresh veggies, this pasta dish is light yet satisfying. Perfect for a meatless main or as a flavorful side, it’s fresh, vibrant, and easy to make any night of the week.
To a larger pot add oil over medium heat. Once hot add in the mushrooms, bell pepper and onion let these vegetables saute for 5-8 minutes or until soft.
To a pot of boiling water add pasta and cook according to package instructions drain and set to the side.
Pour the pasta sauce and water into the softened vegetables let simmer for 10 minutes covered.
Add the cooked pasta in with the sauce and vegetables serve and enjoy!
