Vegetable Pasta

Loaded with a rainbow of fresh veggies, this pasta dish is light yet satisfying. Perfect for a meatless main or as a flavorful side, it’s fresh, vibrant, and easy to make any night of the week.

Ingredients 

  • 10 oz penne pasta
  • 8 oz white mushrooms, sliced
  • ½ yellow onion, diced
  • ½ green bell pepper, diced
  • 2 tbs olive oil
  • 24 oz pasta sauce
  • ½ cup water

Instructions 

  • To a larger pot add oil over medium heat. Once hot add in the mushrooms, bell pepper and onion let these vegetables saute for 5-8 minutes or until soft.
  • To a pot of boiling water add pasta and cook according to package instructions drain and set to the side.
  • Pour the pasta sauce and water into the softened vegetables let simmer for 10 minutes covered.
  • Add the cooked pasta in with the sauce and vegetables serve and enjoy!
