Ingredients

lb
lean ground turkey

cumin
divided

salt

zucchini
sliced into pieces

tomato paste

can black beans
drained and rinsed

can corn

can rotel

pepper

cumin

onion powder

garlic powder

paprika

tsp
chili powder

lime juice
Instructions
To a skillet add the turkey and 1/2 tsp cumin and salt cook the turkey through.
Stir in the tomato paste.
Add in beans, corn, rotel, and the rest of the seasonings. Stir.
Add the zucchini in and stir to combine. Place the lid on and let simmer for 8 minutes or until the zucchini is soft.
Stir in the lime juice and Enjoy! You can top your plate with fresh avocado, lime, cherry tomatoes, cheese and anything else you'd like.
