Zucchini Turkey Skillet

Lean ground turkey, sautéed zucchini, and bold seasoning make this Zucchini Turkey Skillet a quick, healthy dinner that doesn’t skimp on flavor.

Ingredients 

  • 1 lb lean ground turkey
  • 1 tsp cumin, divided
  • ½ tsp salt
  • 2 medium zucchini, sliced into pieces
  • 2 tbs tomato paste
  • 1-15 oz can black beans, drained and rinsed
  • 1-15 oz can corn, drained
  • 1-10 oz can rotel
  • ¼ tsp pepper
  • ½ tsp cumin
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp chili powder
  • 2 tbs lime juice

Instructions 

  • To a skillet add the turkey and 1/2 tsp cumin and salt cook the turkey through.
  • Stir in the tomato paste.
  • Add in beans, corn, rotel, and the rest of the seasonings. Stir.
  • Add the zucchini in and stir to combine. Place the lid on and let simmer for 8 minutes or until the zucchini is soft.
  • Stir in the lime juice and Enjoy! You can top your plate with fresh avocado, lime, cherry tomatoes, cheese and anything else you’d like.

    I made this last night, I omitted the corn (just a preference) but followed the recipe as is.
    I really, really liked it! Nice and easy, you could play with the recipe and still would be great. I also loved the fact the zucchini didn’t get so soft that it was mushy.
