One Pot Chicken Spaghetti

One pot chicken spaghetti is cheesy, creamy, and totally comforting—an easy twist on a family-favorite casserole.

Ingredients 

  • 2 tbsp olive oil,, divided
  • 2 lbs chicken breast, , cubed
  • 2 tsp salt, , divided
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 yellow onion, , diced
  • 1 tbsp minced garlic
  • ¼ cup fresh basil, , chopped
  • 10 oz can rotel
  • 1 lb dry spaghetti
  • 4 ¼ cups chicken broth
  • cup Mozzarella cheese, , shredded
  • ¼ cup parmesan cheese, , shredded
  • cup heavy cream

Instructions 

  • To a large pot on the stove over medium high heat add in 1 tbsp of the oil, once the oil is hot add in the chicken, 1 tsp of salt, and the remaining seasoning. Stir well to coat the chicken in the seasonings and cook the chicken through. Once cooked remove the chicken to a plate and set it to the side.
  • To the same pan the chicken was cooked in add the remaining 1 tbsp of oil and the diced onion cook the onion for 3-4 minutes or until it starts to get soft. Now add in the minced garlic and stir it until it gets fragrant about 15 seconds. Now add in the basil, diced tomatoes, spaghetti (you can break the spaghetti in half to better fit in the pot), chicken broth, 1 tsp salt, and stir well. Cover with the lid and let simmer for 10-12 minutes stirring often until the spaghetti is cooked through.
  • Once the pasta is cooked through stir in the mozzarella, parmesan cheese, heavy cream, and cooked chicken, once the cheese has melted enjoy!
