Sweet Honey Chicken With Rice and Broccoli

Sweet honey chicken with rice and broccoli is a wholesome, balanced meal with sticky-sweet chicken and tender veggies.

Ingredients 

  • 2 tbs olive oil
  • 1 lb chicken breast, cubed
  • ½ tsp pepper
  • ½ tsp salt
  • 1 tbs cornstarch
  • 1 tbs water
  • cup brown sugar
  • cup low sodium soy sauce
  • 3 tbs honey
  • 2 tbs hoisin sauce
  • 2 tbs minced garlic
  • ½ cup chicken broth
  • 1 large head broccoli, chopped
  • 1 ½ – 2 cups cooked white rice

Instructions 

  • Heat a large skillet to medium high heat and add in the oil. Once the oil is hot add in the chicken and season with salt and pepper. Cook the for about 4 minutes on each side at this point.
  • Start on the sauce. To a small bowl add the cornstarch and water whisk well together. To a small sauce pot on the stove over medium heat add the brown sugar, soy sauce, honey, hoisin sauce, and minced garlic bring this mixture up to a simmer whisking frequently turn the heat to low then whisk in the chicken broth and cornstarch slurry whisk well and let simmer for 1-2 minutes or until the sauce starts to thicken. Remove from heat.
  • To the same pan that the chicken is cooking in add the broccoli and cook for 5-6 minutes or until the broccoli becomes tender.
  • Add in the sauce and cooked rice. Stir well and serve enjoy!

    Delicious. A little sweet so I cut back on the honey and brown sugar. I also added sesame seeds at the end.

    Made this for dinner tonight, it was delicious, next time though I’m going to use chicken thighs and instead of adding the rice to the pan I’ll just seeve over white rice
