​What is so great about this recipe is that you can prep the ingredients, put everything in the crock pot, and then let it cook everything together. The only thing you will need to do is build the sandwiches and toast them to your liking.

  • Meat: I normally have boneless, skinless chicken breasts on hand that I will cut into strips
  • Onion: Use either a large yellow onion or white onion that has been thinly sliced
  • Peppers: I combine both thinly sliced red bell peppers and green bell pepper for the best flavor and color
  • Seasoning: Minced garlic, paprika, kosher salt, and ground black pepper
  • Cooking liquid: Adding chicken broth will add flavor and will perfectly cook the tender chicken strips in the slow cooker
  • Thickener: When you cornstarch into the crockpot it will help thicken the sauce made for the chicken cheesesteaks 
  • Serving: Use hoagie rolls and sliced mozzarella cheese when making the sandwiches for the cheesesteak recipe

How to Make Crockpot Chicken Philly Cheesesteak Sandwiches:

Make the thickener:

  1. In a small bowl, whisk together the cornstarch and 2–3 tablespoons of cold water until smooth. 
  2. Set aside.

Assemble in slow cooker:

  1. Add the chicken strips, sliced onion, garlic, red and green peppers, paprika, salt, and pepper to your slow cooker
  2. Pour in the chicken broth and the cornstarch mixture. 
  3. Stir to combine.

  1. Cover and cook on low for 4–6 hours, or until the chicken is fully cooked and the vegetables are tender.

Prepare rolls:

  1. Preheat your oven broiler to high. 
  2. Slice hoagie rolls in half and arrange them on a baking sheet.

Assemble sandwiches:

  1. Using a slotted spoon, scoop the chicken and veggie mixture into each roll. 
  2. Top generously with sliced mozzarella.

Broil:

  1. Broil for 2–3 minutes, or until the cheese is melted and the edges of the bread are golden and crisp. 
  2. Keep a close eye to avoid burning.

Ingredients 

  • 2 lbs boneless, skinless chicken breasts, cut into strips
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
