Classic Potato Soup

Classic potato soup is creamy, hearty, and packed with all your favorite toppings like bacon, cheddar, and green onions.

Ingredients 

  • 6-8 strips bacon, cut into small pieces
  • 1 white onion, diced
  • 1 tbs minced garlic
  • cup all purpose flour
  • 6 large golden potatoes, cut into bite sided pieces
  • 4 cups chicken broth
  • 2 cups milk
  • cup heavy cream
  • 1 tsp salt
  • 1 tsp black pepper
  • ¼ tsp chili powder
  • cup sour cream
  • ¼ cup sliced green onions
  • ¾ cup shredded sharp cheddar cheese

Instructions 

  • To a large dutch oven or pot add the bacon and cook through. Once cooked remove to a separate plate lined with paper towel and set to the side. Save the bacon grease in the pot.
  • Add the diced onion into the pot and saute for 4-5 minutes or until it gets soft. Stir in the minced garlic. Stir in the flour and let it get a golden color. Stir in the diced potatoes, broth, milk, heavy cream, salt, pepper, and chili powder let simmer for 10 minutes.
  • Once the potatoes are tender using a potato masher mash some of the potatoes in the soup. Stir in the sour cream, cheese, and half of the cooked bacon. Let the soup continue to simmer for an additional 3 minutes. Enjoy! Top your bowl of soup with the remaining bacon, shredded cheddar cheese, sliced green onions, and sour cream if desired!

    This was really tasty! I will make it again.
    I made it exactly as the recipe described. Next time I will skip the flour step and rely on the partially mashed potatoes to do the thickening since the consistency was too thick for our preferences.
