Sausage and Vegetables

Ingredients 

  • 1 onion sliced, any color
  • 2 bell peppers sliced
  • 3 red potatoes diced
  • 3 large carrots sliced into chunks
  • 14 oz smoked sausage sliced into smaller disks
  • 2 tbs olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper

Instructions 

  • Preheat oven to 425 degrees F.
  • Put the potatoes and carrots on a sheet pan, drizzle with 1 tbs olive oil and sprinkle half of all of the seasonings, rub this into the vegetables. Bake for 25 minutes.
  • Add the rest of the vegetables and sausage on the sheet pan drizzle with the remaining oil and sprinkle with the rest of the seasonings, stir everything together. Bake for 35 minutes. Enjoy.
