Sour Cream Noodle Bake

This sour cream noodle bake is creamy, cheesy, and layered with Italian sausage for a comforting weeknight casserole.

Ingredients 

  • 1 lb Italian sausage
  • 10 oz egg noodles
  • 1 tbsp minced garlic
  • 14 oz tomato sauce
  • 1 tsp salt
  • 1 yellow onion, diced
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • ½ cup Parmesan cheese
  • ½ cup sour cream
  • 1 ½ cup cottage cheese , or ricotta
  • 1 cup shredded cheddar cheese

Instructions 

  • Preheat oven to 350 degrees F.
  • To a large pan on the stove, add the sausage and diced onion break the sausage up and cook it through. While it is cooking bring a large pot of water on the stove to a boil add in the egg noodles and cook according to the package instructions, once the sausage is cooked through remove any excess grease from the pan now stir in the minced garlic. Then add in the tomato sauce and seasonings. Stir well and let’s timer for five minutes.
  • To a large bowl add the cooked egg noodles, sour cream, and cottage cheese. Stir well. Spray a 9 x 13 baking dish with nonstick spray then add and half of the noodle mixture place half of the sausage mixture over-the-top repeat for two layers in sprinkle with cheddar cheese over the top.
  • Bake for 25 to 30 minutes.

    I was in a pinch for dinner. Kids had places they needed to be. All the dinner plans I could think of were ones they had fought me on in the past. I really wanted them to be well fed before attending their various activities. Everything we’ve tried from Julia we’ve loved so far so I hopped on her website, found this recipe (which matched the ingredients I had in my pantry- with the exception of the meat and noodles, which I replaced with Italian ground turkey meat and ribbon noodles) and sure enough… dinner was ready on time and everyone loved it!!!!
