Ingredients for 3 Ingredient Pumpkin Cookies:

3 ingredient pumpkin cookies
  • Pumpkin: you will need a can of pumpkin purée, not to be confused with pumpkin pie filling that you can find in a can
  • Cake mix: be sure to grab a box of spice cake mix
  • Chocolate: use your favorite brand of chocolate chips

How to make these 3 Ingredient Pumpkin Cookies:

Preheat oven to 350 degrees.

Spray a cookie sheet with non-stick spray or line it with parchment paper.

Add the pumpkin and box of spice cake mix to a medium-sized bowl. Mix well until well combined

Stir in the chocolate chips.

Roll 2 tbsp of cookie dough into a ball and place it on the cookie pan repeat until your pan is full.

Can I use pumpkin pie filling:

For some pumpkin recipes, you might be able to use pumpkin pie filling, however, with this recipe you will want to use just the regular canned pumpkin puree. That way you won’t have your perfect fall treat overloaded with too many spices.

Chips to use for these healthy pumpkin cookies:

  • White chocolate chips
  • Dark chocolate chips
  • Cinnamon chips
  • Semi-sweet chocolate chips

What type of boxed cake mix to use:

For the best Fall flavor, I enjoy using the spiced cake mix, however, you could switch it out with yellow cake mix but then you will have to add some cloves and cinnamon or your favorite pumpkin spice flavors to the box of cake mix with you mix it with the pure pumpkin puree.
