Instructions

  1. Cook the rice according to the package instructions and set aside.
  2. Heat 1 tablespoon of olive oil in a large pan or pot over medium heat.
  3. Add the frozen broccoli and cook for a few minutes until heated through and lightly browned.
  4. Drain the canned chicken and add it to the pan.
  5. Season with 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, 1 teaspoon oregano, and 1 teaspoon Italian seasoning. Stir well.
  6. Add the cream of chicken soup and cooked rice. Stir until everything is combined.
  7. Shred the cheddar cheese and stir it into the mixture until melted and creamy.
  8. Serve warm and enjoy!

2. Chicken & Vegetable Soup

A hearty, comforting soup made with simple, budget-friendly ingredients.

  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 2 teaspoons minced onion

Instructions

  1. In a large pot over medium heat, cook the ground chicken until almost completely cooked through, breaking it apart as it cooks.
  2. Add the frozen carrots and stir. Cook for about 8 minutes.
  3. Peel and dice the potatoes, then add them to the pot.
  4. Add the can of Italian-style diced tomatoes, including the liquid.
  5. Pour in the chicken broth or prepared bouillon water.
  6. Add the black pepper, salt, Italian seasoning, oregano, paprika, and minced onion. Stir well.
  7. Bring the soup to a boil, then reduce the heat and simmer for 20–30 minutes, or until the potatoes are tender and the chicken is fully cooked.
  8. Taste and adjust the seasonings if needed. Serve warm.

3. Chili Cornbread Casserole

A cozy, easy casserole with savory chili and golden cornbread on top.

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare both boxes of corn muffin mix according to the package instructions.
  3. Spray a 9 × 13-inch baking dish with nonstick cooking spray.
  4. Pour both cans of chili into the baking dish and spread evenly.
  5. Carefully spread the prepared cornbread batter over the chili.
  6. Bake for 25–30 minutes, or until the cornbread is golden and cooked through in the center.
  7. Let rest for a few minutes before serving.

4. Sausage, Broccoli & Cheddar Rice Skillet

A quick one-pot dinner loaded with savory sausage, broccoli, and cheesy rice.

Instructions

  1. In a large pot or deep skillet over medium heat, cook the ground sausage until browned and fully cooked.
  2. Drain off any excess grease.

  4. Pour in the amount of water and milk specified on the rice package.
  5. Stir everything together and bring to a simmer.
  6. Cover and cook according to the rice package instructions, approximately 10 minutes or until the rice is tender and the broccoli is heated through.

  5. Add the cooked rice to the skillet.
  6. Pour in the soy sauce and teriyaki sauce. Stir until everything is evenly coated.
  7. Cook for another 5 minutes, stirring occasionally, until heated through.
  8. Serve warm and enjoy!
