Ingredients 

  • 2 eggs
  • 1 dash salt and pepper
  • ¼ cup chopped spinach
  • 1 sliced green onion
  • ¼ cup shredded colby jack cheese

Instructions 

  • In a regular sized mug, whisk all the ingredients together.
  • Microwave for about 1.5 – 2 minutes until the egg sets. Enjoy
