
Alison’s Yellow Rice Casserole
Ingredients
- 10 oz bag yellow rice
- 1 ½ cups shredded sharp cheddar cheese
- 15 oz can southwest corn, drained
- 10 oz can cream of chicken soup
- ½ cup melted butter
Instructions
- Preheat oven to 350 degrees.
- Cook the yellow rice according to the package instructions.
- To a large bowl add the yellow rice, 1 cup of the cheese, drained corn, cream of soup, and butter stir to combine.
- Grease a large casserole dish with non-stick spray. Pour the rice casserole into the baking dish, sprinkle with the remaining cheese bake for 20-25 minutes or until the cheese is completely melted.
