Alison’s Yellow Rice Casserole

Ingredients

  • 10 oz bag yellow rice

  • 1 1/2 cups shredded sharp cheddar cheese

  • 15 oz can southwest corn, drained

  • 10 oz can cream of chicken soup

  • 1/2 cup melted butter

Directions

  • Preheat oven to 350 degrees.
  • Cook the yellow rice according to the package instructions.
  • To a large bowl add the yellow rice, 1 cup of the cheese, drained corn, cream of soup, and butter stir to combine.
  • Grease a large casserole dish with non-stick spray. Pour the rice casserole into the baking dish, sprinkle with the remaining cheese bake for 20-25 minutes or until the cheese is completely melted.
