Angel Hair Pasta with Tomatoes

Light and fresh, this angel hair pasta with tomatoes is a simple dish that shines with garlic, basil, and juicy tomatoes.

Ingredients 

  • 8 ounces angel hair pasta
  • 3 Roma tomatoes, diced
  • 2 green onions, sliced
  • ½ cup Parmesan cheese
  • 1 tbs minced garlic
  • ¼ cup fresh basil, or 2 tsp of dried
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil

Instructions 

  • Fill a large pot with water and bring it to a boil on the stove add the pasta in and cook according to the package instructions.
  • While the pasta is cooking, to a medium sized bowl add in the diced tomatoes, green onions, Parmesan cheese, minced garlic, basil, salt, and pepper. Stir well.
  • Once the pasta is tender strain then add it back into the pot. Add in the olive oil and diced tomato mixture stir well, and serve.

    Hi!! This was AMAZING! I made it with fettuccine instead of angel hair, and it turned out great! I used fresh chives from my garden instead of green onions, and it was amazing!!!! Thanks so much for sharing, it was ready in a blink of an eye. 🩷🩷🩷
