Ingredients 

  • 1 ¼ cups whole wheat flour
  • 1 ¼ cup old fashioned rolled oats
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 dash salt
  • 1 cup vanilla greek yogurt
  • ¼ cup almond milk, or regular milk
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup honey
  • cup melted coconut oil
  • 1 ½ cup fresh blueberries

Instructions 

  • Preheat oven to 350 degrees F.
  • In a medium bowl add the dry ingredients: Flour, oats, baking soda, baking powder, and salt. Whisk together and set aside while you work on the wet ingredients.
  • In a medium sized bowl add the greek yogurt, honey, coconut oil, vanilla, eggs and milk. Stir to combine. Now add the dry ingredients into the wet ingredients and stir together. Now fold the blueberries in.
  • Grease an 8×8 baking dish and add the mixture in. Bake for 40-50 minutes or until the center is set
  • We like to pour a little bit of milk over the top and a drizzle of maple syrup. Enjoy!
