Ingredients

  • 2 large chicken breasts
  • 2 tsp Salt
  • 2 tsp Pepper
  • 2 tsp Paprika
  • 2 tsp Chili powder
  • 2 tsp Cumin
  • 2 tsp Onion powder
  • 2 tsp Garlic powder
  • 2 tsp Oregano
  • 2 tbsp Olive oil
  • 1 yellow onion, diced
  • 3 ½ cups chicken broth
  • 1 cup salsa
  • Optional toppings for the end: cooked white rice if you want to make a burrito bowl, tortillas to make tacos, taco toppings such as guacamole, sour cream, cheese, cilantro and more

Instructions

  • To a small bowl add all of the seasonings in and mix well season the chicken on both sides with the seasoning mixture.
  • To a pot or Dutch oven on the stove over medium high heat add the oil once the oil is hot add in the chicken. Sear on each side for three minutes. The chicken won’t be completely cooked through, you just want it to be seared for added flavor.
  • Remove the chicken to a plate and set it to the side.
  • To the same pot the chicken was cooked in with the drippings still in the pot add the onion and broth scrape the flavorful bits off the bottom of the pot and let simmer for three minutes.  Add in the salsa and add the chicken back into the pot give it a little stir and cover with a lid. Let simmer on a low heat for 25 minutes.
  • Once the chickens cooked through, remove it to a plate and shred it up add the chicken back into the sauce in the pot stir well then serve
