Breakfast Burrito Breakfast Casserole

Ingredients 

  • 1 lb ground breakfast sausage
  • 2 cups frozen peppers and onions blend, or 2 fresh peppers and one fresh yellow onion
  • 12 eggs
  • 1 cup salsa
  • 8 mini street flour tortillas , or you can use regular tortillas just tear them apart to fit better
  • 1 cup shredded cheddar cheese

Instructions 

  • Preheat oven to 350 degrees
  • To a large pan on the stove over medium heat add the sausage peppers and onions break the sausage apart and cook it through. Once cooked remove any excess grease from the pan.
  • To a medium sized bowl, add all of the eggs in and whisk to break the yolks.
  • Add the egg mixture to the sausage and peppers on the stove, scramble the eggs up. Stir in the salsa. Remove from the heat.
  • Spray a large casserole dish with nonstick spray
  • This will make for two layers Add a small amount of the egg and sausage mixture to the bottom of the baking dish (this helps the tortillas not stick) Place four tortillas over the top of the egg and sausage mixture then add more egg and sausage mixture then sprinkle with cheese. Repeat for a second layer. Bake for 30 minutes. Top with your favorite taco toppings.
