  • Pepper: pick your favorite bell peppers (any color peppers will work)
  • Beef: you will need to get some lean ground beef
  • Onion: dice up either a yellow onion or a white onion
  • Rice: I like to use uncooked white rice
  • Seasoning: you will need to use minced garlic, salt, black pepper, and paprika
  • Tomatoes: using a can Rotel (diced tomatoes with green chilis) is a great way to add flavor to these crock pot stuffed peppers
  • Paste: the tomato paste helps thicken and combine the meat mixture together while adding flavor
  • Sugar: just a little bit of brown sugar to balance the savory part of this stuffed pepper recipe
  • Liquid: use either chicken broth or chicken stock you have on hand

Cut the tops off of the bell peppers and remove any of the seeds and membranes inside the peppers.  Now cut off the bottom of the peppers without cutting into the peppers to make them level so that they can stand up right in the crock pot.

Place the peppers into the slow cooker (make sure they are standing upright).

Meat to use for pepper filling:

When making these stuffed peppers I enjoy using ground beef, but you could also use ground turkey or ground chicken as well!

Rice to use:

Using rice in this recipe is a great way to make this a filling dinner. I use white rice or what I have on hand. Jasmine rice works great, but brown rice will take a bit longer to cook.
