1 yellow onion, diced
2 medium zucchiniโs, sliced
1 lb fresh green beans, trimmed and cut into bite sized pieces
1 tbs olive oil
1 lb ground turkey OR ground beef
1 tbs minced garlic
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian seasoning
1/2 tsp dried oregano
1/2 tsp paprika
14 oz fire roasted diced tomatoes
1/2 cup chicken broth
1 cup mozzarella cheese, shredded
Directions
- To a large saute pan over medium heat add in the oil and once it’s hot add in the diced onion and turkey. Break the turkey up with a spatula and cook it through.
- Once the turkey is cooked add in the minced garlic and seasonings and stir well.
- Turn the heat to low add in the diced tomatoes, green beans, zucchini, and chicken broth stir well and let simmer for about 10-15 minutes stirring occasionally until the vegetables are tender.
- Sprinkle the cheese on top cover with a lid to melt the cheese then serve and enjoy!
