Broccoli Panko Orzo

Broccoli panko orzo is creamy and comforting with a crispy topping that adds the perfect crunch to every bite.

Ingredients 

  • 1 tbsp butter
  • 1 yellow onion, diced
  • 1 head broccoli, cut into smaller pieces
  • 1 tbsp minced garlic
  • 1 cup uncooked orzo
  • 2 ½ cups chicken broth, more if needed
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp oregano

Panko Topping

  • 3 tbsp butter
  • ¾ cup Italian style panko breadcrumbs
  • ¾ cup grated Parmesan cheese

Instructions 

  • To a large pan on the stove over medium high heat add in the butter once melted add in the onion, broccoli, garlic, orzo, chicken broth, and seasonings stir well. Bring up to a simmer, turn the heat to low, let simmer covered for eight minutes, stirring occasionally.
  • While the orzo is simmering to a smaller pan on the stove over medium heat add in the 3 tablespoons of butter over medium heat once the butter has melted down add in the panko and stir well. Let cook until golden brown. Stir in the Parmesan cheese and set to the side.
  • Once the orzo is tender stir in the panko mixture and serve.
