This Italian sausage peppers dinner is an easy recipe to make and keeps dinner a low-carb option, but still a super flavorful dish that the whole family can enjoy.

This is a new favorite one-pot meal my family will devour. I love that this delicious meal can be made in less than 40 minutes with minimal prep work before having a delicious one pot meal for a simple yet tasty dinner recipe.

Ingredients for One Pot Sausage and Peppers:

Ingredients for One Pot Sausage Pasta
  • Oil: I normally use extra virgin olive oil or avocado oil I have on hand
  • Sausage: Get whole sausages like Italian sausage links (sweet or hot) and slice the sausages
  • Onion: Use yellow onion or white onion that has been sliced into ¼-inch half-moons
  • Peppers: Use a combination of green bell pepper, red bell pepper, and an additional bell pepper (yellow, orange, or purple), sliced into 3-inch strips
  • Seasoning: For the best flavor, use kosher salt, minced garlic, and dried oregano
  • Cooking liquid: Use chicken broth or vegetable broth, but water can do in a pinch
  • Tomatoes: A simple can of crushed tomatoes adds so much flavor and creates the perfect texture to this sausage and peppers dinner

How to Make One Pot Sausage and Peppers:

Brown the Sausages:

Cook sausages
  1. Heat olive oil in a large lidded pan over medium heat. 
  2. Add the sausage links and cook gently, turning occasionally, until browned on all sides. 
  3. Reduce the heat if they sizzle too quickly. 
  4. Remove sausages and set aside.

Sauté the Veggies:

  1. Increase the heat to high and add the sliced onions and peppers to the pan, tossing to coat with the oil. 
  2. Sear them, stirring occasionally with a spatula or wooden spoon, until they begin to soften and develop some charred spots, and season with salt.

Add Garlic and Deglaze:

  1. Stir in the garlic and cook for 1 minute. 
  2. Pour in the chicken broth and use a spoon to scrape up any browned bits from the bottom. 
  3. Let the broth reduce by half.

Simmer:

Add sausages back to the pan
  1. Stir in the crushed tomatoes and oregano. 
  2. Return the sausages to the pan. 
  3. Bring to a simmer, then lower the heat, cover, and cook for about 20 minutes, until the peppers are tender and the sausages are fully cooked.

Serve:

  1.  Enjoy as-is, or serve over pasta, cauliflower rice, regular rice, or mashed potatoes.

  • 4-5 Italian sausage links, sweet or hot sausages

How to store the easy one-pot sausage dinner:

Fridge: Any leftover sausage and peppers can be added to an airtight container and put in the fridge for up to 5 days for a quick dinner or lunch recipe the next day.

Tips and tricks for making this pepper and Italian sausage recipe:

Kind of sausage:

While for some of my other recipes I enjoy using ground sausage, however, this one pot recipe works well with juicy sausage links. 

You can choose to use turkey sausage, chicken sausage, sweet Italian sausage, or hot Italian sausage.

Using a spicy Italian sausage is a great way to elevate the recipe without much needed change and so much flavor.
