Chicken and Yellow Rice Casserole

This chicken and yellow rice casserole is a one-dish wonder full of hearty, savory flavor and topped with melty cheese.

Ingredients 

  • 9 oz bag yellow rice
  • 1 ⅓ cup water
  • 2 -10 oz cans cream of mushroom soup, or any cream of soup
  • 1 lb chicken breast sliced into strips, or boneless thighs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder

Instructions 

  • Preheat oven to 325 degrees F.
  • To a large bowl add in the rice, water, and cream of mushroom soup stir well to combine the ingredients.
  • Spray a 9×13 baking dish with non stick spray add the rice mixture in and spread it out Place the chicken on the top and sprinkle on the seasonings.
  • Cover tight with foil bake for 75 minutes or until the rice is tender.
