Chicken Mushroom Pasta Casserole

This chicken mushroom pasta casserole is creamy, savory, and packed with tender chicken, pasta, and earthy mushrooms.

Ingredients 

  • 1 lb raw chicken breast, cubed
  • 1 ¾ cup uncooked penne pasta
  • 10 oz can cream of mushroom soup
  • ½ cup milk
  • ¾ cup chicken broth
  • ¼ cup water
  • 8 oz white mushrooms, sliced
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp onion powder
  • cup sour cream
  • 1 cup mozzarella cheese

Instructions 

  • Preheat oven to 425 degrees F.
  • To a large bowl add in the cream of soup, milk, seasonings, water, and broth whisk well now add in the chicken, pasta, and mushrooms.
  • Spray a large casserole dish or 9×13 baking dish with non stick spray. Place the casserole into the baking dish and spread out cover with foil and bake for 40 minutes.
  • Uncover and stir in the sour cream and sprinkle the cheese over the top bake for an additional 10 minutes.

    Delicious! Loved that this is essentially a “dump and go” casserole since it’s all raw at the start. I dislike when casseroles require multiple cooking steps, then long baking times. Takes too long and dries everything out! But this was very creamy and flavorful. I used baby bella mushrooms instead of white, and added spinach at the same time as the sour cream. But otherwise followed the recipe exactly. Will add this to my rotation!
