Chorizo and Potatoes

Chorizo and potatoes is a bold, savory skillet dish with crispy potatoes and spicy sausage—perfect for breakfast, brunch, or dinner.

Ingredients 

  • 1 ½ large russet potatoes, diced small
  • cup yellow onion, , diced
  • 9 oz pork chorizo
  • cup water
  • 1 cup fresh spinach, , chopped

Instructions 

  • To a large pan on the stove over medium heat add in all of the ingredients except for the spinach and stir. Let cook for 10-15 sitting often minutes or until the potatoes and chorizo are cooked through.
  • Stir in the spinach let it cook for 2-3 minutes or until it wilts down. Enjoy.
