
Chorizo and Potatoes
Ingredients
- 1 ½ large russet potatoes, diced small
- ⅓ cup yellow onion, , diced
- 9 oz pork chorizo
- ⅓ cup water
- 1 cup fresh spinach, , chopped
Instructions
- To a large pan on the stove over medium heat add in all of the ingredients except for the spinach and stir. Let cook for 10-15 sitting often minutes or until the potatoes and chorizo are cooked through.
- Stir in the spinach let it cook for 2-3 minutes or until it wilts down. Enjoy.
