Chorizo and Potatoes

Ingredients

  • 1 1/2 large russet potatoes, diced small

  • 1/3 cup yellow onion, diced

  • 9 oz pork chorizo

  • 1/3 cup water

  • 1 cup fresh spinach, chopped

Directions

  • To a large pan on the stove over medium heat add in all of the ingredients except for the spinach and stir. Let cook for 10-15 sitting often minutes or until the potatoes and chorizo are cooked through.
  • Stir in the spinach let it cook for 2-3 minutes or until it wilts down. Enjoy
