Creamy Tomato and Spinach Pasta

This creamy tomato and spinach pasta come together in one easy skillet for a cozy, meatless dinner.

Ingredients 

  • ½ pound penne pasta
  • 1 yellow onion
  • 1 Tbs olive oil
  • 15 oz can diced tomatoes
  • ½ tsp oregano
  • ½ tsp basil
  • ½ tsp salt
  • 1 dash pepper
  • 2 Tbs tomato paste
  • ½ cup water
  • 2 oz cream cheese, diced
  • ¼ cup grated parmesan
  • 4 oz fresh spinach

Instructions 

  • Cook the pasta according to package instructions. Drain the pasta. Set aside.
  • In a large saucepan over medium heat, add the olive oil and onion saute for 3 – 5 minutes. Add in the tomatoes and seasonings and stir well. Add in the tomato paste and water and give a good stir.
  • Bring heat all the way down to low and add in the cream cheese. Stir well until competely worked into the sauce. Now add in the parmesan and stir until melted.
  • Add in the spinach and wait 2-3 minutes until wilted. Stir in the cooked and drained noodles.
  • Enjoy!
