Easy Shepherd’s Pie

This easy shepherd's pie is a cozy, all-in-one meal layered with savory beef, veggies, and creamy mashed potatoes.

Ingredients 

  • ½ lb ground turkey , OR ground beef
  • 12 oz bag frozen mixed vegetables
  • 10.5 oz can cream of mushroom soup
  • 1 pouch dry instant mashed potatoes
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning
  • 4 oz cheddar cheese, shredded

Instructions 

  • Preheat oven to 350 degrees F.
  • To a large skillet on the stove add the ground turkey and break it up and cook it through. Once cooked stir in the bag of frozen mixed vegetables cook together for 3 to 5 minutes now add in the can of cream of mushroom soup and seasonings stir well.
  • Prepare the bag of mashed potatoes according to the package instructions.
  • Spray a casserole dish with nonstick spray then add the turkey mixture and then top with the mashed potatoes. Spread it out as even as possible. Sprinkle cheese over the top and bake for 35 to 40 minutes. Enjoy!

    Don’t try this recipe with Betty Crocker instant potatoes! Figured I would use what I had on hand. The mashed potatoes turned to soup in the oven. So instead of having shepard’s pie we had shepard’s soup.
