Egg Casserole

This egg casserole is simple, cheesy, and totally customizable—great for breakfast, brunch, or make-ahead mornings.

Ingredients 

  • 1 tbsp olive oil
  • ¼ white onion, diced
  • 1 green bell pepper, diced
  • ½ lb ground sausage
  • 12 eggs
  • ½ cup water
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika

Instructions 

  • Preheat oven to 350 degrees F.
  • To a pan on the stove over medium heat add in the oil. Once the oil is hot add in the onion, pepper and sausage break the sausage up and cook it through.
  • To a medium sized bowl add in the eggs, water and seasonings whisk to break the yolks. Spray a 9 x 13 baking dish with nonstick spray add the egg mixture in then add in the sausage and pepper mixture, carefully stir to spread the sausage mixture out.
  • Bake for 30 minutes or until the eggs have set.
