French Onion Potato Casserole

This French onion potato casserole is creamy, cheesy, and packed with rich onion flavor—an indulgent side that steals the show.

Ingredients 

  • 4 medium russet potatoes, peeled and diced small
  • 1 ½ lbs chicken breast, cubed
  • 10 oz can French onion soup
  • 1 packet Lipton onion soup mix
  • 1 ½ cup provolone cheese, shredded

Instructions 

  • Preheat oven to 375 degrees F.
  • Spray a 9×13 baking dish with non stick spray add in all of the ingredients except for 1 cup of the cheese.
  • Cover tightly with foil and bake for 45 minutes.
  • Remove from the oven carefully and remove the foil stir well sprinkle the remaining cheese on top and bake for 15 more minutes or until the potatoes are tender and the chicken is cooked.

    I made this recipe for my 3 year old son and I. I used red potatoes and left the skin on. My son loved it! It’s hard enough trying to find things he’ll eat. It was very flavorful!
