Ground Beef Stew

Ingredients 

  • 1 yellow onion, diced
  • 3 russet potatoes, peeled and cubed small
  • 3 large carrots, diced
  • 1 rib celery, sliced
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 tbs minced garlic
  • 2 tbsp flour
  • 6 oz tomato paste
  • 4 ½ cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup frozen peas

Instructions 

  • To a large Dutch oven or pot on the stove over medium heat add the olive oil once the oil is hot add in the onions, celery and carrots cook for seven minutes stirring occasionally to soften the vegetables slightly, now add in the ground beef and minced garlic break the ground beef up and cook it through once cooked through remove any excess grease from the pot now stir in the flour, stir it well until it no longer looks white then stir it in the tomato paste after the tomato paste as well combined, add in the beef broth, worcestershire sauce, seasonings, potatoes, and frozen peas. Stir well scraping all the flavorful bits off the bottom of the pot then cover with a lid and bring to a simmer let simmer covered for 35 minutes, stirring occasionally. Serve!

    This beef stew is the BEST! I have made it twice now for my family and we love it! This is such a flavorful stew, it has been requested to be in the weekly dinner rotation for the winter, it’s that good! We enjoy it with crackers and it only lasts two days in my house. Thank you Julia!

    I recently tried this recipe and, although it turned out quite tasty, there were a couple of hiccups that affected the final result. I decided at the last minute to add 1/2 a bag of egg noodles that I had in my pantry. If you do this, I suggest adding more broth to ensure that the dish doesn’t become too dry.
    My husband and I enjoyed the flavors, but we both felt like it was missing something, though we couldn’t quite put our finger on it. It wasn’t until I was cleaning up after dinner that I realized I had forgotten the tomato paste! Whoops! That explained the missing depth of flavor.
    In terms of preparation, I’d give this recipe four stars because it was a bit labor-intensive. Nevertheless, the end result was satisfying. With the tomato paste and some additional broth for the noodles, I believe it could have been even better.
    Overall, I’d recommend this recipe with a few tweaks to ensure you don’t forget any crucial ingredients. It’s a delicious dish with the potential to be even better with the right adjustments.
