Ham Tortellini

Ingredients

  • 1 tbsp olive oil

  • 1 yellow onion, diced

  • 1 tbsp minced garlic

  • 16 oz diced ham

  • 2 cups chicken broth, divided

  • 18 oz refrigerated cheese tortellini

  • 1/2 cup heavy cream

  • 1/4 cup Parmesan cheese

  • 1/3 cup mozzarella cheese

Directions

  • To a large pot on the stove over medium high heat, add in the olive oil once hot add in the onion, minced garlic and diced ham sear for two minutes on each side until golden brown
  • With a spatula stir in 1 cup of the chicken broth scraping the flavorful bits off the bottom of the pot bring to a simmer.
    Add in 1 more cup of chicken broth, tortellini, and cream stir. Let simmer and cook 4-5 minutes or until the tortellini is tender.
  • Stir in the Parmesan and mozzarella cheeses.
