Hawaiian Barbecue Chicken Sandwiches

Ingredients 

  • 3 cups pre cooked chicken, , diced
  • ¾ cup barbecue sauce
  • ¼ cup crushed pineapple
  • 3 sliced green onions
  • 4 Hamburger buns
  • Roma tomato, sliced
  • Red onion, sliced
  • Butter lettuce

Instructions 

  • To a medium sized bowl add in the chicken, barbecue sauce, green onions, and crushed pineapple stir until well combined, place this mixture in hamburger buns and top with tomatoes, onions, and lettuce. Enjoy this cold chicken sandwich on a hot day!

    Very easy prep using some previously frozen rotisserie chicken. I cut the chicken much smaller than in the video to make the filling hold together better. Tomato, red onion and spinach (in place of lettuce) were great garnish inside our whole wheat buns. A half-recipe gave 3 very generous servings.

    Thanks very much for these no-cook meal ideas, Julia. We’re enjoying the variety during this week’s heat wave.
