Healthy Seasoned Chicken and Vegetable Skillet

Ingredients

  • 2 tbs olive oil

  • 1 lb chicken breast, cubed

  • 1/2 tsp paprika

  • 1/2 tsp dried rosemary

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp dried thyme

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp chili powder

  • 1 white onion, sliced

  • 1 red bell pepper, cut into larger chunks

  • 1 large zucchini, cut into half moons

  • 4 cups fresh broccoli florets

  • 1/4 cup chicken broth

Directions

  • To a large skillet over medium heat add 1 tbs of olive oil once oil is hot stir in the chicken and seasonings. Cook for about four minutes on each side or until chicken is cooked through. Remove chicken to a separate plate and set to the side.
  • To the same skillet add 1 tbs of olive oil and all of the vegetables season with a dash of salt and pepper. Cook vegetables for two minutes then add in chicken broth, scrape the bits off the bottom of the pan with a spatula cook for an additional six minutes or until vegetables are to the softness that you like them to be.
  • Stir back in the cooked chicken and let it heat through. Enjoy as it is or serve with rice or mashed potatoes!
