Instant Pot Cilantro Lime Rice

Fluffy rice with fresh cilantro and a bright lime kick, made quickly in the Instant Pot. It’s a perfect side for tacos, burrito bowls, or grilled meats.

Ingredients 

  • 3 cups jasmine rice, or regular white rice
  • 4 cups water
  • 2 bay leaves
  • 2 tbs olive oil
  • 1 tsp salt
  • 1 lime, juiced
  • cup fresh cilantro

Instructions 

  • Clean rice well in a strainer under water place the clean rice in the instant pot. Pour in water, bay leaves, oil, salt, and half of the lime juice in. Stir well.
  • Place instant pot lid on set the valve to sealing and press the rice button to cook.
  • Once the time is up do a quick release of the pressure.
  • Remove bay leaves from the rice. Sitr in the remaining lime juice and cilantro. Enjoy!
