Mediterranean Quesadillas

Ingredients

  • 8 medium sized four tortillas

  • 2 tbs butter

  • Toppings:
  • 1 1/2 cups mozzarella cheese

  • 1/2 red onion, diced

  • 1 1/2 cups cherry tomatoes, diced

  • 2 cups fresh spinach, chopped

  • 1/2 cup feta cheese crumbles

Directions

  • Inside each tortilla distribute all of the toppings. Warm a large skillet on the stove add the butter and once melted cook the quesadillas one at a time until the cheese is melty and the tortilla is crisp. Enjoy!

    Super yummy, my toddlers enjoyed them too. I excitingly told my husband ” Mediterranean quesadillas? Unheard of!” and he jokingly replied “There’s a reason they’re unheard of…”. Even though he didn’t like the sound of it at first, he liked it and ate any left overs, haha!
