One Pot Beefy Cheesy Potatoes

This one pot beefy cheesy potatoes dish is a hearty, comforting skillet meal loaded with ground beef, tender potatoes, and melted cheese.

Ingredients 

  • 2 tbsp olive oil
  • 4 medium russet potatoes, peeled and diced small
  • 1 yellow bell pepper, diced
  • 1 yellow onion, diced
  • 1 tbsp minced garlic
  • 1 lb ground beef
  • ¾ cup chicken broth
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 2 tsp paprika
  • 1 cup Colby jack cheese

Instructions 

  • To a large pan on the stove over medium heat add in the oil. Once the oil is hot, add in the onion and potatoes cook for 4 minutes stirring often.
  • Now add in the bell pepper, minced garlic, ground beef, and seasonings break the ground beef up and cook for 3-4 minutes (the ground beef will not be cooked through).
  • Add in the broth and turn the heat to low stir well and cook covered for 5-10 minutes or until the ground beef cooked through and the potatoes are tender.
  • Stir in the cheese once it’s a melty serve.

    First I want to say I’m a huge fan of yours and have been watching your videos for years. I love how simple most of your recipes are so I made this last night. It did not turn out. After almost 40 minutes of cooking the potatoes, they were still undercooked. The grease from the hamburger was swimming in the bottom so I scooped most of it out. The only thing I can think of is that I cooked it in a Dutch oven….I’m new to using it, could that be why? The flavors were all there
