One Pot Chicken Spaghetti

2 tbsp 2 olive oil, divided
2 lbs 2 chicken brest, cubed
2 tsp 2 salt, divided
1 tsp 1 pepper
1 tsp 1 paprika
1 tsp 1 dried oregano
1 tsp 1 onion powder
1 tsp 1 garlic powder
1 1 yellow onion, diced
1 tbsp 1 minced garlic
1/4 cup 1/4 fresh basil, chopped
10 oz 10 can rotel
1 lb 1 dry spaghetti
4 1/4 cups 4 1/4 chicken broth
1/3 cup 1/3 Mozzarella cheese, shredded
1/4 cup 1/4 parmesan cheese, shredded
1/3 cup 1/3 heavy cream
Directions
- To a large pot on the stove over medium high heat add in 1 tbsp of the oil, once the oil is hot add in the chicken, 1 tsp of salt, and the remaining seasoning. Stir well to coat the chicken in the seasonings and cook the chicken through. Once cooked remove the chicken to a plate and set it to the side.
- To the same pan the chicken was cooked in add the remaining 1 tbsp of oil and the diced onion cook the onion for 3-4 minutes or until it starts to get soft. Now add in the minced garlic and stir it until it gets fragrant about 15 seconds. Now add in the basil, diced tomatoes, spaghetti (you can break the spaghetti in half to better fit in the pot), chicken broth, 1 tsp salt, and stir well. Cover with the lid and let simmer for 10-12 minutes stirring often until the spaghetti is cooked through.
- Once the pasta is cooked through stir in the mozzarella, parmesan cheese, heavy cream, and cooked chicken, once the cheese has melted enjoy!
