One Pot Chicken Veggie Skillet is a great way to enjoy a healthy chicken dish filled with crisp-tender veggies for the most delicious complete meal.

- Oil: use the olive oil or avocado oil you have on hand
- Protein: you will need to have boneless skinless chicken breasts cut into small cubed pieces
- Onion: I like to use a diced yellow onion, but you can use what you have available
- Seasonings: be sure to have kosher salt, ground black pepper, and Italian seasoning
- Tomatoes: for the best results use a can of petite diced tomatoes
- Veggies: frozen mixed vegetables (or any frozen vegetables)
- Cheese: use shredded cheddar cheese to add even more flavor
How to make the One Pot Veggie Skillet:
To the bottom of the skillet on the stove over medium-high heat add the oil once hot add in the chicken, onion, and seasonings stir well to coat the chicken in the seasonings.
Let cook for 4 minutes stirring occasionally the chicken doesn’t need to be fully cooked through.
Stir in the tomatoes and frozen vegetables and let cook for 15 minutes stirring occasionally.
Once the chicken is cooked and the vegetables are tender, stir in the cheese and let it melt.

Fridge: Place any of the leftovers from the one-pot meal into an airtight container and store it in the fridge for up to 5 days.

When making this Italian chicken vegetable skillet you can use your favorite cut of chicken. I enjoy using chicken breasts, but you can use boneless chicken thighs as well.

When making this healthy dish, you can use a meat thermometer to check the internal temperature of the bite-sized pieces. The safe internal temperature for chicken is 165 degrees F.

Fresh or frozen vegetables:
For this easy vegetable dinner, you will use a bag of frozen vegetables to keep the meal prep super simple for those busy nights. However, you could use fresh vegetables if you choose to, just be sure to adjust the cooking time accordingly!

Feel free to add any fresh herbs you like or other Italian herbs and seasonings you like such as garlic powder or onion powder.
