  • Oil: use the olive oil or avocado oil you have on hand

  • Onion: I like to use a diced yellow onion, but you can use what you have available

Tips and tricks for making this healthy dinner recipe:

Meat to use:

When making this Italian chicken vegetable skillet you can use your favorite cut of chicken. I enjoy using chicken breasts, but you can use boneless chicken thighs as well.

How to know when the skillet chicken recipe is done:

When making this healthy dish, you can use a meat thermometer to check the internal temperature of the bite-sized pieces. The safe internal temperature for chicken is 165 degrees F.

Since the chicken is cut up into smaller pieces, doing this extra step is a great way to cut down on the cooking time for this one-pan chicken dinner.

Fresh or frozen vegetables:

For this easy vegetable dinner, you will use a bag of frozen vegetables to keep the meal prep super simple for those busy nights. However, you could use fresh vegetables if you choose to, just be sure to adjust the cooking time accordingly!

Optional seasonings:

Feel free to add any fresh herbs you like or other Italian herbs and seasonings you like such as garlic powder or onion powder.

Other colorful veggies to add:

  • Bell peppers
  • Shredded carrots
  • Green beans
  • Broccoli
