Parmesan Zucchini Skillet

Carmelized zucchini and sweet corn are topped with savory parmesan cheese, zesty lime juice, and fresh cilantro for a unique side dish.

Ingredients 

  • 3 medium zucchini, diced
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 cup canned corn, drained
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp pepper
  • Juice of 1 lime
  • ½ cup parmesan cheese
  • 2 tbsp fresh cilantro

Instructions 

  • Add the oil to a large skillet over medium heat. Once hot, add the diced zucchini, minced garlic, corn, and seasonings. Cook for about 7-9 minutes, stirring occasionally, or until the zucchini is a golden brown color.
  • Remove from heat and stir in the lime juice, parmesan cheese, and cilantro. Enjoy!
