
Parmesan Zucchini Skillet
Ingredients
- 3 medium zucchini, diced
- 2 tbsp olive oil
- 2 tbsp minced garlic
- 1 cup canned corn, drained
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp dried thyme
- ½ tsp salt
- ¼ tsp pepper
- Juice of 1 lime
- ½ cup parmesan cheese
- 2 tbsp fresh cilantro
Instructions
- Add the oil to a large skillet over medium heat. Once hot, add the diced zucchini, minced garlic, corn, and seasonings. Cook for about 7-9 minutes, stirring occasionally, or until the zucchini is a golden brown color.
- Remove from heat and stir in the lime juice, parmesan cheese, and cilantro. Enjoy!
