Parmesan Zucchini Skillet

Ingredients

  • 3 medium zucchiniโ€™s, diced

  • 2 tbs olive oil

  • 2 tbs minced garlic

  • 1 cup canned corn, drained

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

  • 1/4 tsp dried thyme

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1 lime, juiced

  • 1/2 cup parmesan cheese

  • 2 tbs fresh cilantro

Directions

  • To a large skillet over medium high heat add the oil once hot add in the diced zucchini, minced garlic, corn, and seasonings stir occasionally and let cook for about 7-9 minutes or until the zucchini is a golden brown color.
  • Turn the heat off and stir in the lime juice, parmesan cheese, and cilantro. Enjoy!
