Pesto Chicken

Juicy chicken smothered in herby pesto and melty cheese—this Pesto Chicken is a flavor-packed dinner that’s as easy as it is delicious.

Ingredients 

  • 2 large chicken breasts
  • ½ cup basil pesto
  • 1 dash salt and pepper
  • ½ cup mozzarella cheese, sliced
  • 1 cup cherry tomatoes, sliced

Instructions 

  • Preheat oven to 400 degrees F.
  • Slice the two chicken breasts in half horizontally, this will help the chicken cook quicker and become super tender. Season the chicken with salt and pepper on each side.
  • Grease a 9×13 baking dish add 1/3 cup of pesto all over the bottom of the dish, add the chicken in, brush 2 Tbs more pesto on top of the chicken breasts. Bake for 22 minutes or until the chicken is completely cooked.
  • Place a slice of mozzarella cheese over each chicken breast then add the tomatoes in. Broil in your oven for 1-3 minuets or until the cheese is melty. Enjoy!
