Ranch and Veggie Chicken Sheet Pan Dinner

This ranch and veggie chicken sheet pan dinner is packed with savory ranch flavor, juicy chicken, and roasted vegetables—all baked on one pan.

Ingredients 

  • 1 green bell pepper,, diced
  • 1 red onion, , diced
  • 1 zucchini, , diced
  • 1 yellow squash, , diced
  • 1 lb fresh broccoli florets,, cut into smaller pieces
  • 1 ½ lbs chicken breast, , cubed
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 packet ranch seasoning
  • 1 tsp pepper

Instructions 

  • Preheat oven to 400 degrees F.
  • Line a sheet pan with parchment paper then add all of the ingredients to the sheet pan and carefully mix with a spatula until everything is coated in the oil and seasoning.
  • Bake for 35 minutes or until the chicken is cooked through and the vegetables are tender. After the cooking time us up turn the oven broil on and let broil for 1-2 minutes. Enjoy!
